Did you ever resolve this? I recently bought a Joying head unit with 1280*720 resolution, and I am also finding the fonts on a number of applications to be very small.

Wait till you try a 1920x1080 unit. If I want to change a song, I have to pull over, put on reading glasses and undo my seatbelt so I can lean forward and read the text.
I can't believe there isn't a simple option to reduce the screen resolution, or an accessibility setting to increase font size.
Come on Joying, this is a serious problem.
